Citrus-vanilla salad

Ingredients:
- 3 navel oranges
- 3 small pink or red grapefruits
- 3 blood oranges
- Juice of 2 lemons (preferably Meyer lemons)
- 1/4 cup sugar
- 1 vanilla bean, split lengthwise, seeds scraped out
Instructions:
- Cut off the top and bottom of the navel oranges, grapefruits, and blood oranges, then use a paring knife to remove the peel and white pith. Slice the fruits horizontally and place them on a platter with raised edges.
- In a small saucepan over medium heat, mix the lemon juice, sugar, 1/4 cup of water, and scraped vanilla seeds. Heat until it starts to simmer, then take it off the stove and allow it to come to room temperature.
- Drizzle the liquid over the fruits, cover them, and put in the refrigerator for at least 2 hours or overnight.
