Citrus-vanilla salad

Ingredients:

  • 3 navel oranges
  • 3 small pink or red grapefruits
  • 3 blood oranges
  • Juice of 2 lemons (preferably Meyer lemons)
  • 1/4 cup sugar
  • 1 vanilla bean, split lengthwise, seeds scraped out

Instructions:

  1. Cut off the top and bottom of the navel oranges, grapefruits, and blood oranges, then use a paring knife to remove the peel and white pith. Slice the fruits horizontally and place them on a platter with raised edges.
  2. In a small saucepan over medium heat, mix the lemon juice, sugar, 1/4 cup of water, and scraped vanilla seeds. Heat until it starts to simmer, then take it off the stove and allow it to come to room temperature.
  3. Drizzle the liquid over the fruits, cover them, and put in the refrigerator for at least 2 hours or overnight.
