Citrus salad with star anise syrup

Ingredients:

  • 1/3 cup sugar
  • 1/3 cup water
  • 3 whole star anise
  • 5 large ruby red or pink grapefruit
  • 4 blood oranges

Instructions:

  1. Combine sugar and water in a small sturdy saucepan and heat over medium heat, stirring until the sugar dissolves. Mix in star anise and let it simmer for 5 minutes. Allow it to rest off the heat for 30 minutes.
  2. Using a sharp knife, remove the peel from the fruit along with the white pith. Separate the fruit segments from the membranes and place them in a bowl. Extract the juice from the membranes into the same bowl.
  3. Pour the syrup with star anise into the bowl with the fruit and juice, and mix carefully. Optionally, take out the star anise before serving.
