Citrus salad with blood orange tahini dressing

Ingredients:

  • 1 Grapefruit (peeled, sliced)
  • 1 Navel oranges (peeled, sliced)
  • 3 Blood oranges (peeled, sliced)
  • 1 tablespoon Tahini
  • 1 teaspoon Lemon juice
  • 2 tablespoons Blood orange juice
  • 1 teaspoon Hemp seeds for garnish

Instructions:

  1. Set aside 1 blood orange for the dressing and peel the rind off all the other citrus fruits. Begin by trimming the ends and placing a flat side down on a cutting board. Carefully remove the peel and white pith, following the curve of the citrus fruit.
  2. After completing the peeling process, slice the oranges into 1/8-inch thickness.
  3. In a bowl, combine the blood orange juice and lime juice. Whisk in the tahini until well mixed. Season with a pinch of sea salt and set the mixture aside.
  4. On a plate, arrange the sliced citrus fruits and drizzle the prepared dressing on top. Decorate with micro greens or your preferred peppery salad greens.
  5. Just before serving, sprinkle hemp seeds over the dish.
