Citrus salad with blood orange tahini dressing

Ingredients:
- 1 Grapefruit (peeled, sliced)
- 1 Navel oranges (peeled, sliced)
- 3 Blood oranges (peeled, sliced)
- 1 tablespoon Tahini
- 1 teaspoon Lemon juice
- 2 tablespoons Blood orange juice
- 1 teaspoon Hemp seeds for garnish
Instructions:
- Set aside 1 blood orange for the dressing and peel the rind off all the other citrus fruits. Begin by trimming the ends and placing a flat side down on a cutting board. Carefully remove the peel and white pith, following the curve of the citrus fruit.
- After completing the peeling process, slice the oranges into 1/8-inch thickness.
- In a bowl, combine the blood orange juice and lime juice. Whisk in the tahini until well mixed. Season with a pinch of sea salt and set the mixture aside.
- On a plate, arrange the sliced citrus fruits and drizzle the prepared dressing on top. Decorate with micro greens or your preferred peppery salad greens.
- Just before serving, sprinkle hemp seeds over the dish.
