Citrus salad
Tangy citrus salad bursting with refreshing flavors of oranges, lemons, and grapefruits. A zesty and vibrant dish perfect for a light and healthy meal.
Ingredients:
- 1 large orange, peeled and ends trimmed
- 1 grapefruit, peeled and ends trimmed
- 1 large or 2 small fennel bulbs, thinly sliced
- 1/4 cup extra-virgin olive oil
- 1/4 cup packed fresh basil leaves
- Kosher salt and freshly ground black pepper
- 1/3 cup chopped walnuts, toasted
Instructions:
- Set up a sieve on top of a medium-sized bowl. Position an orange over the bowl and carefully slice along the membranes of each segment using a paring knife. Release the segments into the sieve. Repeat the process with the grapefruit. Gently press the membranes to release any remaining juice into the bowl. Keep the collected juices in the bowl. Transfer the fruit segments and sliced fennel into a salad bowl.
- Using a blender or a small food processor, combine the oil, basil, and 3 tablespoons of the reserved juice until you achieve a smooth mixture. Season with salt and pepper according to your preference. Drizzle the blended mixture over the fruit and fennel. Sprinkle the chopped walnuts and mix until all ingredients are evenly coated.
