Citrus kale salad

Ingredients:

  • ¼ cup olive oil
  • 1 tablespoon white-wine vinegar
  • 1 garlic clove, grated
  • ¼ teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 teaspoons orange juice
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 14 cups chopped or torn curly kale, stems removed (1½ lbs.)
  • 2 small oranges, peeled and sectioned
  • ¼ cup grated Parmesan cheese

Instructions:

  1. Combine oil, vinegar, garlic, lemon peel, lemon juice, orange juice, salt, and pepper in a big bowl. Put in kale and mix well. Rub the kale gently until it softens and gets coated evenly, for about 2 to 3 minutes. Allow it to sit for 1 hour.
  2. Right before you serve it, mix in oranges and Parmesan cheese into the salad and combine thoroughly.
