Citrus kale salad

Ingredients:
- ¼ cup olive oil
- 1 tablespoon white-wine vinegar
- 1 garlic clove, grated
- ¼ teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 teaspoons orange juice
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 14 cups chopped or torn curly kale, stems removed (1½ lbs.)
- 2 small oranges, peeled and sectioned
- ¼ cup grated Parmesan cheese
Instructions:
- Combine oil, vinegar, garlic, lemon peel, lemon juice, orange juice, salt, and pepper in a big bowl. Put in kale and mix well. Rub the kale gently until it softens and gets coated evenly, for about 2 to 3 minutes. Allow it to sit for 1 hour.
- Right before you serve it, mix in oranges and Parmesan cheese into the salad and combine thoroughly.
