Citrus kale and quinoa salad

Indulge in the zesty flavors of citrus-infused kale combined with hearty quinoa in this vibrant and nutritious salad. Perfect for a light and refreshing meal!

Ingredients:

  • 4 cups kales (cleaned and chopped)
  • 1/2 orange (peeled and sliced)
  • 1/2 grapefruit (peeled and sliced)
  • 1/4 cup pecans or almonds (chopped)
  • 1 cup quinoa (cooked)
  • 1/4 cup olive oil or grapeseed oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon orange juice
  • 1/2 tablespoon honey
  • 1 pinch salt and pepper

Instructions:

  1. Combine Dressing components in a small bowl and mix thoroughly.
  2. Combine salad components in a large bowl.
  3. Drizzle half of the dressing over the salad bowl and mix until all components are evenly covered with dressing.
  4. Drizzle additional dressing if preferred.
  5. Enjoy. Keep any remaining salad in a sealed container in the refrigerator for a maximum of 2 days.
