Citrus kale and quinoa salad

Ingredients:
- 4 cups kales (cleaned and chopped)
- 1/2 orange (peeled and sliced)
- 1/2 grapefruit (peeled and sliced)
- 1/4 cup pecans or almonds (chopped)
- 1 cup quinoa (cooked)
- 1/4 cup olive oil or grapeseed oil
- 2 tablespoons red wine vinegar
- 1 tablespoon orange juice
- 1/2 tablespoon honey
- 1 pinch salt and pepper
Instructions:
- Combine Dressing components in a small bowl and mix thoroughly.
- Combine salad components in a large bowl.
- Drizzle half of the dressing over the salad bowl and mix until all components are evenly covered with dressing.
- Drizzle additional dressing if preferred.
- Enjoy. Keep any remaining salad in a sealed container in the refrigerator for a maximum of 2 days.
