Citrus celery salad

Enjoy the refreshing blend of tangy citrus fruits and crunchy celery in this zesty salad bursting with bright flavors and crisp textures.

Ingredients:

  • 6-8 ribs celery, sliced on an angle
  • 2-3 scallions, sliced
  • 1-2 lemons, zest & juice (depending on size)
  • few glugs tablespoons olive oil
  • 2-3 pinches salt & pepper

Instructions:

  1. Cut the ends off the celery and keep the leaves. Cut the celery at a slant, roughly chop the leaves and put everything in a bowl.
  2. Cut the spring onions, grate the outer rind of the lemon and squeeze the juice and mix with the celery. Stir well.
  3. Pour a generous amount (a glug or two or three) of olive oil, a nice pinch of salt & freshly ground black pepper, stir thoroughly. Cover and put in the fridge. It's tasty right away, cold, or the next day!
