Citrus and watercress salad
Indulge in the refreshing flavors of Citrus and Watercress Salad. A vibrant mix of tangy citrus fruits paired with peppery watercress is a culinary delight!
Ingredients:
- 1 bunch watercress, stems removed
- 1 head Boston lettuce
- 2 pink grapefruit
- 2 oranges
- 1/4 cup finely diced red onion
- 2 pickled chipotle chiles, chopped
- 1 tablespoon red wine vinegar
- 2 teaspoons olive oil
- 1/2 teaspoon coarse salt
- 1/4 teaspoon cracked black pepper
- 1 avocado, peeled, seeded and thinly sliced
Instructions:
- Rinse the leafy vegetables thoroughly and remove any hard stems. Rip them into small pieces suitable for eating.
- Above a bowl to collect the liquids, peel the grapefruits and oranges. Slice between the partitions to take out the segments. Eliminate the seeds. Put the grapefruit and orange segments in a separate bowl, keeping the juice. Combine onions with the segments in the bowl.
- In a tiny bowl, blend the chipotle peppers, vinegar, olive oil, salt, pepper, and 2 tablespoons of the reserved grapefruit/orange juice.
- When ready to eat, drizzle the dressing over the fruits, add the greens, and gently mix. Display on a serving dish or divide among 4 salad plates. Decorate with slices of avocado.
