Citrus and avocado salad with honey vinaigrette

Ingredients:

  • 2 tablespoons honey, preferably Tupelo
  • 2 tablespoons fresh lime juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon sour cream
  • 1 tablespoon red wine vinegar
  • 1 teaspoon poppy seeds
  • Salt and freshly ground pepper
  • 3 tablespoons pine nuts
  • 2 red grapefruits
  • 2 navel oranges
  • 2 Hass avocados, cut into 1-inch dice
  • 60g fresh goat cheese, crumbled (optional)
  • 2 bunches of watercress, thick stems discarded
  • 2 tablespoons minced chives

Instructions:

  1. Combine the honey with lime juice, oil, sour cream, and vinegar in a small bowl. Mix in the poppy seeds and season with salt and pepper.
  2. Toast the pine nuts in a small skillet over medium heat, moving the pan around, until they turn golden brown, which should take around 2 minutes.
  3. Peel the grapefruits and oranges with a sharp knife, ensuring all the bitter white pith is removed. Cut between the membranes over a large bowl to release the sections. Keep the grapefruit and orange juices for later. Dry the citrus sections with paper towels and put them back in the bowl.
  4. Toss together the avocados, goat cheese, and watercress in the bowl gently. Add the chopped chives, toasted pine nuts, and honey dressing, then toss once more. Serve right away.
