Christmas eve salad

Ingredients:
- 1 heart romaine lettuce, chopped
- 5 cooked baby beets, sliced
- 1 1/2 cups jicama matchsticks (from 1 small jicama)
- 2 small navel oranges, peeled and sliced into rounds, plus 2 tablespoons orange juice
- 1 tablespoon fresh lime juice
- 1 tablespoon mayonnaise
- 1/2 teaspoon sugar
- Kosher salt and freshly ground pepper
- 1/4 cup extra-virgin olive oil
- 1/3 cup pomegranate seeds
- 1/3 cup chopped roasted peanuts
Instructions:
- Place the diced romaine in a spacious bowl or lay it out on a serving dish. Combine the beets, jicama, and oranges.
- Mix together the freshly squeezed orange juice, lime juice, mayonnaise, sugar, half a teaspoon of salt, and a couple of pepper grinds in a compact bowl. Gradually add the olive oil while whisking.
