Christmas eve salad

Ingredients:

  • 1 heart romaine lettuce, chopped
  • 5 cooked baby beets, sliced
  • 1 1/2 cups jicama matchsticks (from 1 small jicama)
  • 2 small navel oranges, peeled and sliced into rounds, plus 2 tablespoons orange juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon sugar
  • Kosher salt and freshly ground pepper
  • 1/4 cup extra-virgin olive oil
  • 1/3 cup pomegranate seeds
  • 1/3 cup chopped roasted peanuts

Instructions:

  1. Place the diced romaine in a spacious bowl or lay it out on a serving dish. Combine the beets, jicama, and oranges.
  2. Mix together the freshly squeezed orange juice, lime juice, mayonnaise, sugar, half a teaspoon of salt, and a couple of pepper grinds in a compact bowl. Gradually add the olive oil while whisking.
  3. Flavor the salad with salt, pour the dressing over it, and garnish with pomegranate seeds and peanuts.
