Chow chow potato salad

Ingredients:

  • 1360g Yukon gold potatoes, cut into 1-inch chunks
  • Kosher salt 
  • 1 1/4 cups apple cider vinegar 
  • 1/2 cup sugar 
  • 1 teaspoon mustard seed 
  • 1/2 teaspoon ground turmeric 
  • 1/2 teaspoon freshly ground black pepper 
  • 2 cups shredded cabbage
  • 1 cup cauliflower florets 
  • 1 red bell pepper, diced 
  • 1 green bell pepper, diced 

Instructions:

  1. Place the potatoes in a large saucepan or Dutch oven. Fill the saucepan with cold water until the potatoes are covered and add 2 tablespoons of salt. Heat over medium heat and wait until it starts to simmer. Cook until the potatoes become soft, which usually takes around 10 to 15 minutes. Remove the water and keep the potatoes aside.
  2. In the same saucepan, combine the vinegar, sugar, mustard seed, turmeric, black pepper, and 1 teaspoon of salt. Bring the mixture to a boil. Then, add the cabbage, cauliflower, and bell peppers. Let it boil again. Put the potatoes back into the saucepan and mix everything well. Transfer the mixture to a bowl. Season with salt and pepper. You can either serve it warm or refrigerate until you are ready to serve.
