Chopped plum salad

Ingredients:

  • Chopped Salad
  • 1/3 cup toasted sliced almonds
  • 4 cups mizuna, chopped
  • 3 plums, diced
  • 1/2 cup white salad turnips, cut into little sticks
  • 1/4 cup green onions, finely diced
  • Ginger Miso Dressing
  • 2 tablespoons white miso
  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 3/4 tablespoon ginger (fresh minced or frozen)
  • 1/2 tablespoon water
  • 2 teaspoons honey or agave
  • 1 teaspoon sesame oil

Instructions:

  1. If your sliced almonds are not already toasted, heat them in a small skillet over medium-low heat. Stir frequently and let them toast for 3-5 minutes until they turn golden-brown. Once they are toasted, transfer them to a dish to cool down.
  2. Prepare the dressing by combining all the ingredients in a jar or a bottle with a tightly sealed lid. Shake the jar thoroughly and set it aside.
  3. Now, get the salad ready by chopping the mizuna, dicing the plums and green onions, and cutting the turnips into small sticks about half the size of a matchstick. Mix all the vegetables in a bowl.
  4. When ready to serve, distribute the greens evenly among four plates, top with the toasted almonds, and drizzle with the Ginger Miso Dressing.
