Chopped greek salad with pita chips

Indulge in the Mediterranean flavors of a chopped Greek salad, featuring crisp veggies, tangy feta, briny olives, and crunchy pita chips. Bon appétit!

Ingredients:

  • 2 28-oz. pkg. frozen shoestring french fries, such as Ore-Ida
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • 1 cup roughly chopped fresh flat-leaf parsley leaves and tender stems
  • 2 cloves garlic, roughly chopped (2½ tsp.)
  • Flaky sea salt, for serving
  • mayonnaise and ketchup, for serving (optional)

Instructions:

  1. Preheat the oven to 450°F and position the racks in the upper and lower thirds. Put the fries in a large bowl and mix them with oil and kosher salt. Spread the fries evenly on 2 large, rimmed baking sheets. Bake until they turn golden brown, for about 30 to 35 minutes, remember to toss them and switch the pans' positions halfway through the baking time.
  2. In the meantime, spread parsley and garlic on a large cutting board. Use a chef's knife to finely chop the parsley and garlic together. Alternatively, you can finely chop the parsley and garlic in a small food processor, which should take about 15 seconds.
  3. Once the fries are ready, take out the baking sheets from the oven and immediately mix the fries with the chopped parsley and garlic. Place the baking sheets back in the oven and bake until aromatic, which should take around 1 minute. Sprinkle the fries with flaky sea salt. If you like, you can serve them with mayonnaise and ketchup for dipping.
