Chopped apple & blue cheese salad with warm bacon vinaigrette

Ingredients:
- Chopped Apple Salad
- 170g Blue Cheese crumbles
- 6 Granny Smith Apples, Cored and Diced
- 1 Medium Head of Romaine, Chopped
- 1/2 cup Chopped Pecans, Lightly Toasted in the Oven
- Warm Bacon Vinaigrette
- 10 Slices of Thick-Sliced Bacon, Diced
- 1 Medium Shallot, Minced
- 2/3 cup Red Wine Vinegar
- 1 1/2 teaspoons Light Brown Sugar
- 3/4 teaspoon Dijon Mustard
- 1/4 teaspoon Honey
Instructions:
- Preheat a large skillet on medium heat and cook the diced bacon until it becomes crispy. Once done, remove the bacon and place it on a paper towel to absorb excess oil. Keep only 3 tablespoons of the bacon drippings, and discard the rest.Next, add the shallots to the skillet with the bacon drippings and sauté them for one minute until they become tender.While the shallots are cooking, prepare the vinaigrette by whisking together red wine vinegar, light brown sugar, Dijon mustard, and maple syrup in a small bowl. Pour this mixture into the skillet with the shallots and bacon drippings, and stir well to combine. Take the skillet off the heat.In a large bowl, combine the apples, romaine lettuce, pecans, and blue cheese crumbles. Add as much vinaigrette as desired and toss everything together. Serve the salad immediately.
