Chipotle corn salad with grilled bacon

  • 4 slices applewood-smoked bacon
  • 2 poblano peppers
  • 2 scallions
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced sweet onion

Instructions:

  1. Mix together 1/2 cup of sour cream, 1/2 cup of ranch dressing, 2 tablespoons of fresh lime juice, 1 tablespoon of ground cumin, 1 teaspoon of agave syrup, 1 canned chipotle in adobo (minced) along with 1 tablespoon of adobo sauce, and season with Kosher salt and freshly ground pepper.
