Chinese chicken salad with crispy won ton strips

Ingredients:

  • 2 grilled or baked teriyaki chicken breasts
  • 110g won ton pi cut into 1/3-inch wide strips
  • 8 cups chopped napa cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrot
  • 90g blanched and thinly sliced snow peas (optional)
  • 4 pieces green onions (scallions)
  • 1/3 cup unseasoned rice vinegar
  • 2 tablespoons sweet mirin
  • 2 1/2 tablespoons soy sauce (not lite)
  • 3 teaspoons sesame oil
  • 1/4 cup canola oil
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon roasted sesame seeds
  • freshly ground black pepper to taste
  • cilantro for garnish (optional)

Instructions:

  1. Cut grilled chicken breasts into thin slices, and keep them in the fridge until needed.
  2. Fry the won ton pi strips in batches that fit into the pot without overcrowding, until they turn golden brown, flipping them once. Each batch should take about a minute. After frying, place them on paper towels to drain excess oil. You can prepare these strips a few days before serving. Store the cooked won ton strips in a Ziploc bag in the refrigerator until you're ready to use them.
  3. Mix together napa and red cabbage, carrots, sliced snow peas (if desired), and scallions. Store the mixture in the refrigerator to keep it chilled.
  4. To make the dressing, mix vinegar with sesame seeds in a large jar. You can add a few grinds of pepper for extra flavor. This dressing can be prepared several days ahead of time. When you're ready to serve the salad, take the dressing out of the fridge an hour beforehand and give it a good shake.
