Chineasy cucumber salad
Delight in the refreshing flavors of a Chineasy cucumber salad with crisp cucumbers, zesty dressing, and a sprinkle of aromatic herbs. Bon appétit!
Ingredients:
- 1 tablespoon Chinkiang vinegar
- 1 teaspoon Sichuan chili oil
- 1 teaspoon sesame oil
- 1 teaspoon turbinado sugar
- 1/4 teaspoon Kosher salt
- 3 Persian or Kirby cucumbers or 1 English cucumber
- 1 teaspoon toasted sesame seeds
- 2 tablespoons roasted unsalted peanuts, crushed
- 2 tablespoons cilantro leaves
Instructions:
- Combine the vinegar, chili oil, sesame oil, sugar, and salt in a medium bowl and mix them until the sugar is fully dissolved. Set aside the dressing.
- Cut the cucumbers in half lengthwise. If you are using English cucumbers, take out and discard the seeds using a small spoon. Place the halved cucumbers on a cutting board with the cut side facing down and gently crush them by giving a few firm hits with the side of a cleaver or a large chef's knife until they split at some points. As an alternative, you can simply press down on them with the side of the knife. Slice the flattened cucumbers into half-moon shapes that are 3/4 inch thick.
- Coat the cucumbers with the prepared dressing, distribute them onto plates, and sprinkle each portion with sesame seeds, peanuts, and cilantro.
