Chilled noodle salad with sriracha peanut sauce

Delicious chilled noodle salad with a zesty sriracha peanut sauce. Perfect blend of flavors for a refreshing and satisfying meal.

Ingredients:

  • 230g dried rice noodles
  • 3 tablespoons creamy peanut butter
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons Sir Kensington’s Sriracha Mayo
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon grated fresh garlic
  • 1/2 teaspoon ground ginger
  • 2 cups shredded purple cabbage
  • 1 1/2 cups shredded carrots
  • 1 1/2 cups sliced snap peas
  • 3/4 cup thinly sliced scallions
  • 1/4 cup chopped cilantro
  • Crushed peanuts, for serving (optional)

Instructions:

  1. Prepare noodles following the instructions on the package.
  2. In a big bowl, combine peanut butter, soy sauce, Sriracha Mayo, lime juice, honey, garlic, and ginger using a whisk.
  3. After cooking, drain the noodles, rinse them with cold water, drain once more, and then transfer them to the sauce-filled bowl. Mix well to ensure the noodles are coated with the sauce.
  4. Mix in cabbage, carrots, peas, scallions, and cilantro with the noodles. Toss everything together. Top with peanuts before serving.
