Chilled cucumber and woodear mushroom salad

Indulge in the refreshing flavors of cucumber and earthy woodear mushrooms in this chilled salad. Perfect for a light and delicious dining experience.

Ingredients:

  • 14 grams dried woodear mushrooms
  • 200 grams Japanese cucumber, thinly sliced
  • 1 teaspoon sesame seeds
  • 1 teaspoon grated ginger
  • 15 milliliters lime juice
  • 15 milliliters light soy sauce
  • 15 milliliters sesame oil
  • 1 teaspoon palm sugar
  • 1/2 teaspoon Thai chilli, chopped

Instructions:

  1. Place woodear mushrooms in cold water and let them sit for 15-30 minutes to hydrate.
  2. Remove water from mushrooms and cook in boiling water for 2 minutes. Remove water and let them cool down.
  3. Combine ginger, lime juice, soy sauce, sesame oil, sugar, and chili in a bowl.
  4. Add sliced cucumbers, mushrooms, and sesame seeds to the mixture.
  5. Refrigerate for a minimum of one hour before serving.
