Chicory caesar salad
Indulge in the classic flavors of a Chicory Caesar Salad. Crisp, bitter greens paired with creamy dressing create a taste sensation like no other.
Ingredients:
- oil-packed anchovy fillets
- garlic clove, finely chopped
- cup coarsely chopped parsley
- cup extra-virgin olive oil
- cup fresh lemon juice
- tsp. kosher salt
- lb. mixed chicories (such as endive, frisée, escarole, and/or radicchio), torn into large pieces
- oz. Pecorino Romano
- Freshly ground black pepper
Instructions:
- Crush anchovies and garlic on a chopping board using the flat side of a chef’s knife until you form a paste. Move the paste to a big bowl and include parsley, oil, lemon juice, and salt then stir well to blend. Combine chicories into the bowl with the mixture and mix gently to cover.
- Move the salad to a serving plate and grate Pecorino on top. Spice it with pepper.
