Chickpea salad sandwich

Ingredients:

  • 1 (15-oz.) can chickpeas (garbanzo beans), drained and rinsed
  • 1/4 cup mayonnaise
  • 1 1/2 Tbsp fresh lemon juice (from 1 lemon)
  • 2 tsp.s za’atar
  • 1 tsp. Dijon mustard
  • 1/2 tsp. garlic powder
  • 1/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped celery (from 1 celery stalk)
  • 4 (1 1/2-oz.) multigrain bread slices, toasted
  • 1/2 cup loosely packed arugula (1/2 oz.)

Instructions:

  1. Combine chickpeas, mayonnaise, lemon juice, za’atar, mustard, garlic powder, salt, and pepper in a food processor. Blend until mixture is crumbled, typically around 10 pulses. Move the mixture to a bowl and gently mix in the celery.
  2. Evenly distribute the chickpea mixture onto 2 slices of bread; add arugula evenly on top and cover with the remaining 2 bread slices. Cut the sandwiches in half before serving.
