Chickpea salad sandwich
Delicious chickpea salad sandwich recipe that's packed with fresh veggies and zesty flavors. A satisfying twist on a classic dish!
Ingredients:
- 2 (440g) cans no-salt-added chickpeas, rinsed
- 6 tablespoons extra-virgin olive oil
- 3 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- ½ teaspoon garlic powder
- ½ cup finely chopped celery
- ¼ cup finely chopped fresh dill
- ⅛ teaspoon salt
- ⅛ teaspoon ground pepper
- 4 tablespoons vegan mayonnaise
- 8 slices whole-grain bread, toasted
- 4 green lettuce leaves
- 4 thin slices red onion
- 4 tomato slices
Instructions:
- Mix together chickpeas, oil, lemon juice, mustard, and garlic powder in a spacious bowl. Use a fork or potato masher to crush the chickpeas until they are mostly mashed but with some whole pieces remaining. Add celery, dill, salt, and pepper to the mixture.
- On one side of each of 4 bread slices, evenly spread 1 tablespoon of mayonnaise. Layer lettuce, onion, tomato, and the chickpea mixture on top. Complete the sandwich with the remaining 4 bread slices.
