Chickpea salad sandwich

Delicious chickpea salad sandwich recipe that's packed with fresh veggies and zesty flavors. A satisfying twist on a classic dish!

Ingredients:

  • 2 (440g) cans no-salt-added chickpeas, rinsed
  • 6 tablespoons extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • ½ cup finely chopped celery
  • ¼ cup finely chopped fresh dill
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 4 tablespoons vegan mayonnaise
  • 8 slices whole-grain bread, toasted
  • 4 green lettuce leaves
  • 4 thin slices red onion
  • 4 tomato slices

Instructions:

  1. Mix together chickpeas, oil, lemon juice, mustard, and garlic powder in a spacious bowl. Use a fork or potato masher to crush the chickpeas until they are mostly mashed but with some whole pieces remaining. Add celery, dill, salt, and pepper to the mixture.
  2. On one side of each of 4 bread slices, evenly spread 1 tablespoon of mayonnaise. Layer lettuce, onion, tomato, and the chickpea mixture on top. Complete the sandwich with the remaining 4 bread slices.
