Chickpea salad
Savor the flavors of a delightful chickpea salad bursting with fresh veggies and zesty vinaigrette. A healthy and satisfying dish perfect for any meal!
Ingredients:
- 2 teaspoons Champagne or cider vinegar
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1 cup canned chickpeas, rinsed
- 1 cup dried cranberries
- 1 cup edamame
- 2 carrots, peeled and diced small
- 1 red bell pepper, diced small
- 2 tablespoons extra virgin olive oil
Instructions:
- Mix vinegar, salt, pepper, basil, oregano, and thyme in a medium bowl and keep to the side.
- In a large bowl, blend chickpeas, edamame, dried cranberries, red bell pepper, and carrots together. Stir the mixture using a large wooden spoon or rubber spatula. Keep it to the side.
- Gradually add the oil to the bowl with the vinegar mixture. Once the mixture is properly combined, pour it over the bean mixture and stir thoroughly with a rubber spatula. Cover the bowl with plastic wrap and refrigerate for a minimum of one hour.
- Before serving, give it a final stir and transfer the mixture to a serving dish.
