Chickpea salad

Savor the flavors of a delightful chickpea salad bursting with fresh veggies and zesty vinaigrette. A healthy and satisfying dish perfect for any meal!

Ingredients:

  • 2 teaspoons Champagne or cider vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 cup canned chickpeas, rinsed
  • 1 cup dried cranberries
  • 1 cup edamame
  • 2 carrots, peeled and diced small
  • 1 red bell pepper, diced small
  • 2 tablespoons extra virgin olive oil

Instructions:

  1. Mix vinegar, salt, pepper, basil, oregano, and thyme in a medium bowl and keep to the side.
  2. In a large bowl, blend chickpeas, edamame, dried cranberries, red bell pepper, and carrots together. Stir the mixture using a large wooden spoon or rubber spatula. Keep it to the side.
  3. Gradually add the oil to the bowl with the vinegar mixture. Once the mixture is properly combined, pour it over the bean mixture and stir thoroughly with a rubber spatula. Cover the bowl with plastic wrap and refrigerate for a minimum of one hour.
  4. Before serving, give it a final stir and transfer the mixture to a serving dish.
