Chickpea salad

Delight your taste buds with a flavorful chickpea salad bursting with fresh ingredients and zesty dressings. A perfect blend of textures and flavors.

Ingredients:

  • 1/2 cup green chickpeas
  • 1/2 cup brown chickpeas
  • 1 bunch fresh scallions (about 1 cup)
  • 1 large tomato (about 1 cup)
  • 1 teaspoon red chili flakes (I used dried Kashmiri chili)
  • 2 limes
  • salt and pepper to season

Instructions:

  1. Begin by soaking the chickpeas in water overnight.
  2. Afterward, remove the water and wash the chickpeas with cold water.
  3. Next, cook the chickpeas in a pot of boiling water until they are soft. This should take approximately 45 minutes. Once ready, drain the chickpeas and set them aside.
  4. While waiting, prepare the remaining vegetables. Cut the tomato in half, remove the seeds, and roughly chop the tomato.
  5. Thinly slice the scallions diagonally. Combine the chickpeas, tomatoes, and scallions in a mixing bowl.
  6. Cut the limes in half and squeeze out the juice. Pour the juice over the vegetables, sprinkle with chili flakes, and mix well.
  7. Season with salt and pepper to taste.
  8. Serve the dish immediately or chilled alongside toasted naan or flatbread.
