Chickpea salad
Delight your taste buds with a flavorful chickpea salad bursting with fresh ingredients and zesty dressings. A perfect blend of textures and flavors.
Ingredients:
- 1/2 cup green chickpeas
- 1/2 cup brown chickpeas
- 1 bunch fresh scallions (about 1 cup)
- 1 large tomato (about 1 cup)
- 1 teaspoon red chili flakes (I used dried Kashmiri chili)
- 2 limes
- salt and pepper to season
Instructions:
- Begin by soaking the chickpeas in water overnight.
- Afterward, remove the water and wash the chickpeas with cold water.
- Next, cook the chickpeas in a pot of boiling water until they are soft. This should take approximately 45 minutes. Once ready, drain the chickpeas and set them aside.
- While waiting, prepare the remaining vegetables. Cut the tomato in half, remove the seeds, and roughly chop the tomato.
- Thinly slice the scallions diagonally. Combine the chickpeas, tomatoes, and scallions in a mixing bowl.
- Cut the limes in half and squeeze out the juice. Pour the juice over the vegetables, sprinkle with chili flakes, and mix well.
- Season with salt and pepper to taste.
- Serve the dish immediately or chilled alongside toasted naan or flatbread.
