Chicken waldorf salad

Delicious Chicken Waldorf Salad recipe with a perfect balance of flavors. Packed with juicy chicken, crunchy apples, and toasted walnuts. Perfect for a light and satisfying meal.

Ingredients:

  • 1 medium apple, unpeeled, chopped
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 cups diced cooked chicken (about 1 large breast)
  • 1 cup red seedless grapes, halved
  • 1 stalk celery, finely chopped
  • 1/4 cup golden raisins
  • 1/2 cup toasted walnuts, coarsely chopped
  • 3/4 cup yogurt (preferably Greek non-fat)
  • 1/4 cup mayonnaise
  • Juice of 1/2 orange (about 1/4 cup)
  • 1/4 teaspoon kosher salt

Instructions:

  1. For presentation: Baby arugula, additional grapes, dried grapes, and walnuts for decoration
  2. Toss the diced apple with the freshly squeezed lemon in a spacious bowl. Include the chicken, grapes, celery, dried grapes, and walnuts, and mix delicately.
