Chicken tarragon salad

Ingredients:

  • 1 teaspoon finely chopped fresh tarragon leaves
  • 1 cup red seedless grapes, cut in 1/2
  • 2 ribs celery, chopped

Instructions:

  1. Mix mayonnaise, yogurt, poppy seeds, and tarragon in a small bowl to prepare the dressing; keep it aside.
  2. In another bowl, mix chicken, grapes, celery, and walnuts. Add 1/2 cup of dressing and mix well; set it aside.
  3. Take a large bowl, add spring lettuce mix and 1/4 cup of dressing. Toss using tongs.
  4. Plate 1 1/2 cups of spring mix lettuce on each plate. Top it with 1 cup of tarragon chicken. Serve with the extra dressing on the side.
