Chicken taco salad

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons taco seasoning (store-bought or your own mix)
  • 1/4 cup vegetable oil 
  • 2 tablespoons butter
  • 3/4 cup ranch dressing (bottled is fine)
  • 1/4 cup salsa (as spicy as you'd like) 
  • 3 tablespoons finely minced fresh cilantro
  • 2 ears corn, shucked
  • 1 large head or 2 regular heads green leaf lettuce, shredded thin 
  • 3 Roma tomatoes, diced 
  • 1/2 cup grated pepper-jack cheese 
  • 2 avocados, diced 
  • 3 green onions, sliced 
  • 1/2 cup fresh cilantro leaves 
  • Tortilla chips of your choice (flavored or not), crushed slightly, for topping salad

Instructions:

  1. To prepare the chicken: Sprinkle a generous amount of taco seasoning on both sides of the chicken breasts. In a large skillet over medium-high heat, heat oil and butter. Cook the chicken until it is deeply golden brown on the outside and cooked through in the middle, which should take about 4 minutes per side or until it reaches an internal temperature of 70 °C. Allow the chicken to rest for 5 minutes before further handling.
  2. For the dressing: As the chicken is cooking, combine ranch dressing, salsa, and cilantro in a bowl, stirring well to mix everything together.
  3. Putting together the salad: Utilize the same skillet used for cooking the chicken to cook the corn. Roll the corn in the flavorful oil and butter mixture, then either grill it on a grill pan or cook in a separate skillet until it is crisp and lightly browned. Cut off the kernels using a sharp knife and set them aside. Cut the cooked chicken into small cubes.
  4. Arrange a platter by layering shredded lettuce, diced chicken, tomatoes, cheese, corn, avocados, green onions, cilantro, and crushed chips. Drizzle the prepared dressing over the top, reserving some for serving on the side if desired. Serve the salad in individual bowls.
