Chicken & spinach salad jars

Delicious Chicken & Spinach Salad Jars bursting with vibrant flavors and nutritious ingredients. Perfect for a quick and satisfying meal on the go.

Ingredients:

  • Mustard-Thyme Vinaigrette
  • 5 teaspoons red wine vinegar
  • 5 teaspoons country Dijon mustard
  • 3/4 teaspoon chopped fresh thyme leaves
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 tablespoons extra virgin olive oil
  • Salad Jars
  • 230g cooked chicken breast, chopped
  • 2 cups red grapes, halved
  • 1/3 cup walnuts, roughly chopped
  • 1/3 cup shaved Asiago cheese
  • 4 cups baby spinach, roughly torn

Instructions:

  1. Prepare Mustard-Thyme Dressing: Combine vinegar, mustard, thyme, salt, and pepper in a small bowl. Gradually add oil while whisking continuously until well combined.
  2. Evenly distribute Mustard-Thyme Dressing into 4 pint-sized mason jars. Add chicken over the dressing. Layer the rest of the ingredients, finishing with spinach (you might need to press the spinach down firmly into the jars). Seal with lids and store in the refrigerator for up to 4 days. When ready to eat, empty onto a plate or bowl, mix well, and savor.
