Chicken salad with wild rice and oranges

Ingredients:
- 1/3 cup Mayonnaise
- 2 tablespoons Frozen Orange Juice Concentrate, Thawed
- 3 cups Cubed Cooked Chicken (From Rotisserie Chicken)
- 1/2 cup Pecans, toasted and coarsely chopped
- 1/2 cup Dried Cranberries
- 1 Orange, segments removed and chopped
- 1 Celery rib, cut into small dice
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/3 cup Wild Rice
- 1 cup Water
- Lettuce leaves and Orange segments for serving
Instructions:
- Combine mayonnaise and orange juice concentrate in a big bowl and mix well. Include chicken, nuts, cranberries, orange, celery, salt, and pepper. Stir everything together thoroughly. Refrigerate with a cover for at least an hour.
- Wash rice in a fine sieve under cold running water, then let it drain. Boil water in a sturdy saucepan and add in the rice. Let it simmer with the lid on until the rice is soft, usually around 40 to 50 minutes. Drain the rice and let it cool before mixing it into the chicken salad. Serve the salad over a bed of greens.
