Chicken salad with mango chutney and pistachios

Ingredients:
- ¾ cup shelled pistachios
- 2 tsp. cumin seeds
- 1½ Tbsp. black peppercorns
- 1 whole rotisserie chicken, skin and bones removed, meat chopped (about 5 cups)
- ½ cup golden raisins, chopped
- 1 small jalapeño chile, stemmed, seeded, and minced
- 1⁄3 cup minced yellow onion
- 1⁄3 cup small-diced celery
- ¼ cup small-diced carrot
- ½ cup diced fresh mango (optional)
- 1 cup Major Grey’s mango chutney
- ¾ cup mayonnaise (preferably Duke’s)
- 2 Tbsp. Creole or other grainy mustard
- 2 Tbsp. sour cream (optional)
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh basil

Instructions:
- Heat the pistachios in a small skillet over medium heat, stirring occasionally to ensure they are toasted evenly without burning, for 2 to 3 minutes. Once done, let them cool down before roughly chopping them. Use the same skillet to toast the cumin seeds over medium heat, stirring gently until they release their aroma, which takes about 1 minute. Remove from heat and let it cool. Toast the black peppercorns in the same skillet over medium heat, stirring gently until fragrant, about 1 minute. Once cooled, crack them coarsely using a mortar and pestle, a rolling pin, or the back of a spoon. Set aside.
- Combine the diced chicken, raisins, jalapeño, onion, celery, carrot, mango (if available), and the chopped pistachios in a large bowl. Set aside.
- In a different small bowl, mix together the chutney, mayonnaise, mustard, and sour cream (if using). Pour this mixture over the chicken mixture and combine well. For a creamier texture, you can add an extra ¼ cup of mayonnaise. Add the mint, basil, cumin seeds, and cracked peppercorns to the mix. Taste and season with salt, if needed (up to 1 tsp). Allow the chicken salad to sit for 30 to 40 minutes before serving to let the flavors meld together. Store any leftovers in a sealed container in the fridge for up to 3 days.
