Chicken salad tomato cups

Delight in the refreshing flavors of tender chicken tossed with crisp veggies in a juicy tomato cup. Perfect blend of savory and fresh.

Ingredients:

  • ½ cup mayonnaise
  • ⅓ cup finely chopped red onion
  • ⅓ cup finely chopped celery
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon fresh lemon juice
  • ⅛ teaspoon freshly ground pepper
  • 170g deli-roasted chicken, shredded (1 1/2 cups)
  • 18 Campari tomatoes, halved crosswise

Instructions:

  1. Combine the first 7 ingredients in a medium bowl; delicately fold in the chicken.
  2. Scoop out and remove tomato pulp carefully, ensuring a 1/8-inch shell remains. Turn the tomato shells upside down on multiple layers of paper towels; allow to drain for 5 minutes.
  3. Fill each tomato shell with approximately 1 tablespoon of chicken salad. Add decoration, if preferred.
