Chicken salad tomato cups
Delight in the refreshing flavors of tender chicken tossed with crisp veggies in a juicy tomato cup. Perfect blend of savory and fresh.
Ingredients:
- ½ cup mayonnaise
- ⅓ cup finely chopped red onion
- ⅓ cup finely chopped celery
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh chives
- 1 tablespoon fresh lemon juice
- ⅛ teaspoon freshly ground pepper
- 170g deli-roasted chicken, shredded (1 1/2 cups)
- 18 Campari tomatoes, halved crosswise
Instructions:
- Combine the first 7 ingredients in a medium bowl; delicately fold in the chicken.
- Scoop out and remove tomato pulp carefully, ensuring a 1/8-inch shell remains. Turn the tomato shells upside down on multiple layers of paper towels; allow to drain for 5 minutes.
- Fill each tomato shell with approximately 1 tablespoon of chicken salad. Add decoration, if preferred.
