Chicken salad tea sandwiches

Delight in the flavors of tender chicken, crisp vegetables, and zesty dressing with these charming tea sandwiches. Perfect for a light and satisfying meal!

Ingredients:

  • 2 (440g) cans no-salt-added chickpeas, rinsed
  • 6 tablespoons extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • ½ cup finely chopped celery
  • ¼ cup finely chopped fresh dill
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 4 tablespoons vegan mayonnaise
  • 8 slices whole-grain bread, toasted
  • 4 green lettuce leaves
  • 4 thin slices red onion
  • 4 tomato slices

Instructions:

  1. Mix chickpeas, oil, lemon juice, mustard, and garlic powder in a big bowl. Crush the chickpeas with a fork or potato masher until mostly mashed with some pieces still intact. Add celery, dill, salt, and pepper and stir well.
  2. Spread a layer of 1 tablespoon mayonnaise on one side of every 4 bread slices. Evenly place lettuce, onion, tomato, and the chickpea mix on top. Cover with the rest of the bread slices.
