Chicken salad lettuce cups
Delicious chicken salad nestled in crisp lettuce cups, a refreshing and light dish bursting with flavors and textures. Perfect for a healthy meal or appetizer.
Ingredients:
- 3 four-ounce boneless, skinless chicken breasts
- 3 tablespoon lemon pepper
- 1/4 cup plus two tablespoons water
- 3/4 cup green seedless grapes, halved lengthwise
- 1/2 cup diced celery
- 1/2 cup diced cashews
- 1/2 cup diced red onion
- 1/2 cup nonfat sour cream
- 1/2 cup nonfat mayonnaise
- sea salt and freshly ground black pepper, to taste
- 2 tablespoon chopped cilantro, basil, or dill (optional)
- 4-8 red leaf lettuce leaves
Instructions:
- Season the chicken with the lemon pepper. Cook in a sauté pan filled with water over medium heat. Cover the pan with a lid and simmer until fully cooked, which should take approximately 15-20 minutes. Take it off the heat and let it rest for about 5 minutes. Cut the chicken into 1-inch cubes and transfer them to a large mixing bowl.
- Add the grapes, celery, cashews, red onion, sour cream, and mayonnaise to the bowl. Season with salt and pepper according to your taste, and mix in your preferred fresh herbs, if desired.
- Arrange 1 or 2 red leaf lettuce leaves on a serving plate or in a bowl. Fill the middle of the leaf with 1 cup of chicken salad. Carefully wrap the leaf around the chicken salad mixture and savor the flavors.
