Chicken salad
Delight in the fresh flavors of a classic chicken salad. Tender chicken, crisp veggies, and a creamy dressing create the perfect balance of taste and texture.
Ingredients:
- 4 cups minced cooked chicken
- 1 cup minced celery
- 1/4 cup minced onion
- 1/4 cup minced pecans
- 1/4 cup minced cucumber
- 2 tablespoons mango chutney
- 1/4 cup mayonnaise
- 2 teaspoons hot Madras curry powder
- Salt and pepper
Instructions:
- Combine the chicken, celery, onion, pecans, and cucumber in a medium bowl. In a separate small bowl, mix the remaining ingredients until the curry powder is evenly distributed and the mixture turns a mustard yellow color. Gently add the mayonnaise mixture to the chicken mixture a little at a time. Ensure the salad is not too moist or too dry – you might not require all of the mayonnaise mixture. Taste and adjust the seasonings as needed. Cover the bowl with plastic wrap and refrigerate for at least 1 hour. Serve the chilled salad on a bed of lettuce or spoon it into a hollowed-out pineapple half.
