Chicken, pepper & tomato balsamic salad

Ingredients:

  • ¼ cup balsamic vinegar plus 1 tablespoon, divided
  • 2 tablespoons extra-virgin olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 4 cups grape tomatoes (about 540g), halved
  • ½ cup thinly sliced white onion
  • ⅓ cup chopped fresh basil or parsley
  • 2 cups sliced cooked chicken breast (340g)
  • 1 cup sliced green bell pepper

Instructions:

  1. Combine 1/4 cup vinegar, oil, salt, and pepper in a big bowl by whisking them together. Mix in tomatoes, onion, and basil (or parsley) and stir well. Chill in the refrigerator, stirring occasionally, for a minimum of 1 hour. Then, add chicken, bell pepper, and the remaining 1 tablespoon of vinegar. Toss everything together until well coated.
