Chicken, pepper & tomato balsamic salad

Ingredients:
- ¼ cup balsamic vinegar plus 1 tablespoon, divided
- 2 tablespoons extra-virgin olive oil
- ¾ teaspoon kosher salt
- ¼ teaspoon ground pepper
- 4 cups grape tomatoes (about 540g), halved
- ½ cup thinly sliced white onion
- ⅓ cup chopped fresh basil or parsley
- 2 cups sliced cooked chicken breast (340g)
- 1 cup sliced green bell pepper
Instructions:
- Combine 1/4 cup vinegar, oil, salt, and pepper in a big bowl by whisking them together. Mix in tomatoes, onion, and basil (or parsley) and stir well. Chill in the refrigerator, stirring occasionally, for a minimum of 1 hour. Then, add chicken, bell pepper, and the remaining 1 tablespoon of vinegar. Toss everything together until well coated.
