Chicken pea pasta salad
Delight your taste buds with this flavorful chicken pea pasta salad, a perfect combination of tender chicken, crunchy peas, and al dente pasta.
Ingredients:
- 4 cups Dry Bowtie pasta
- 2 tablespoons Butter
- 2 Boneless Chicken breasts
- 3 cups Frozen peas
- 2 tablespoons Szeged Chicken Rub
- 5 tablespoons Fresh Lemon Juice
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Garlic Powder
- 1 Onion flakes
- 1 teaspoon Dry Oregano
- 1 teaspoon Black pepper
- 1 teaspoon Salt
Instructions:
- Begin by cooking the farfalle pasta in lightly salted water following the package instructions or until it is cooked but still slightly firm to the bite. Once done, drain the pasta under cold water and set it aside.
- In the meantime, season both sides of the chicken breasts with the Szeged Chicken Rub and cook them in 2 tablespoons of melted butter over medium heat. Turn the chicken several times until it is completely cooked.
- Transfer the cooked chicken to a cutting board and use two forks to shred it.
- Next, cook the frozen peas in a medium saucepan of boiling water, then lower the heat and let the peas simmer for about 5 minutes until they are cooked. Drain the peas and add them to a large bowl along with the cooled cooked pasta and shredded chicken.
- Add the seasonings, lemon juice, and olive oil, then mix everything together until well coated.
- Serve the dish warm or refrigerate it to serve cold later. Enjoy!
