Chicken kiev
Delicious Chicken Kiev recipe with succulent chicken breast, flavorful garlic butter filling, and crispy golden breadcrumbs. A true culinary delight!
Ingredients:
- 1/2 cup (1 stick) salted butter, room temperature
- 1/2 teaspoon chopped fresh tarragon leaves
- 1/2 teaspoon chopped fresh flat leaf parsley
- 1/2 teaspoon chopped fresh thyme leaves
- Freshly ground black pepper
- 3 cups grapeseed oil
- 6 boneless skinless chicken breasts
- 1 cup all-purpose flour
- Salt
- 2 eggs, beaten
- 1/4 cup milk
- 2 cups panko bread crumbs
- Crispy salad, vegetables or starch, for serving, if desired
Instructions:
- Combine the softened butter with freshly chopped herbs and season with freshly ground black pepper. Shape the mixture into a log about 1-inch in diameter, wrap it in plastic wrap or wax paper, and place it in the freezer overnight for optimal results.
- Preheat your oven to 180 °C. Heat oil in a large, heavy skillet until it reaches 150 °C, or until a breadcrumb sizzles upon being dropped in. Be careful not to let the oil start smoking!
- Using a sharp knife, create a slit in the top of each chicken breast, making it at least 1-inch long and 1-inch deep. Retrieve the chilled herb butter from the freezer and cut it into 1-inch pieces. Fill the pocket in each chicken breast with the herb butter, ensuring the opening can be sealed.
- To prepare for breading, follow these steps: Season the flour with salt and pepper and place it in a shallow dish. In another dish, combine the eggs and milk. Place the bread crumbs in a third shallow dish.
- Coat each chicken breast in seasoned flour, shaking off any excess. Dip it into the egg mixture, making sure it's fully coated and letting any extra drip off. Then, coat it with breadcrumbs before frying it in the hot oil until it turns golden brown on the outside. Once cooked, transfer the chicken breasts to a baking tray and bake in the oven for 10 to 12 minutes, or until they are fully cooked. Serve with a crisp salad, vegetables, and your choice of starch.
