Chicken caesar salad

Delicious chicken caesar salad bursting with flavors of grilled chicken, crisp romaine lettuce, savory parmesan cheese, and creamy caesar dressing. Perfect for a refreshing and satisfying meal.

Ingredients:

  • 1 Clove of Garlic
  • 2 tablespoons Greek Yogurt
  • 1 tablespoon Olive Oil
  • 50 grams Parmesan
  • 1 splash Lemon
  • Salt & Pepper
  • 2 Chicken Breasts
  • 4 Rashers of Bacon
  • 2 Eggs
  • 1/2 Lettuce
  • 2 Spring Onions
  • 2 pieces Bread

Instructions:

  1. Preheat the oven to 200C/400F/Gas Mark 5.
  2. Tenderize the chicken breasts by pounding them with a rolling pin between two sheets of parchment paper.
  3. Season both sides of the chicken with salt and pepper according to your preference.
  4. Sear the chicken on both sides in a grill pan, then transfer to the preheated oven for 15 minutes. Similarly, crisp up the bacon. Boil two eggs in a saucepan filled with water over high heat for 15 minutes, maintaining a rolling boil.
  5. Creating the Dressing
  6. Crush a garlic clove using a mortar and pestle.
  7. Combine the yogurt with the crushed garlic, mixing thoroughly.
  8. Incorporate the oil, lemon juice, grated Parmesan, and seasonings.
  9. Give the dressing a final mix and set aside to allow the flavors to meld.
  10. Assembling the Salad
  11. Slice the lettuce and spring onion, and place them in a salad bowl.
  12. Toast both slices of bread in the oven until crispy.
  13. Dice the boiled eggs and toasted bread before adding them to the salad bowl.
  14. Chop the cooked chicken and bacon into bite-sized pieces and add them to the salad bowl.
  15. Pour the prepared dressing over the salad, then toss everything together until well combined.
