Chicken caesar salad
Delicious chicken caesar salad bursting with flavors of grilled chicken, crisp romaine lettuce, savory parmesan cheese, and creamy caesar dressing. Perfect for a refreshing and satisfying meal.
Ingredients:
- 1 Clove of Garlic
- 2 tablespoons Greek Yogurt
- 1 tablespoon Olive Oil
- 50 grams Parmesan
- 1 splash Lemon
- Salt & Pepper
- 2 Chicken Breasts
- 4 Rashers of Bacon
- 2 Eggs
- 1/2 Lettuce
- 2 Spring Onions
- 2 pieces Bread
Instructions:
- Preheat the oven to 200C/400F/Gas Mark 5.
- Tenderize the chicken breasts by pounding them with a rolling pin between two sheets of parchment paper.
- Season both sides of the chicken with salt and pepper according to your preference.
- Sear the chicken on both sides in a grill pan, then transfer to the preheated oven for 15 minutes. Similarly, crisp up the bacon. Boil two eggs in a saucepan filled with water over high heat for 15 minutes, maintaining a rolling boil.
- Creating the Dressing
- Crush a garlic clove using a mortar and pestle.
- Combine the yogurt with the crushed garlic, mixing thoroughly.
- Incorporate the oil, lemon juice, grated Parmesan, and seasonings.
- Give the dressing a final mix and set aside to allow the flavors to meld.
- Assembling the Salad
- Slice the lettuce and spring onion, and place them in a salad bowl.
- Toast both slices of bread in the oven until crispy.
- Dice the boiled eggs and toasted bread before adding them to the salad bowl.
- Chop the cooked chicken and bacon into bite-sized pieces and add them to the salad bowl.
- Pour the prepared dressing over the salad, then toss everything together until well combined.
