Chicken, bacon and tomato salad

Ingredients:
- 4 bacon strips, coarsely chopped
- 450g chicken tenders
- Salt and freshly ground pepper
- 1/2 pint small cherry tomatoes, halved
- 6 scallions, white and tender green, coarsely chopped
- 2 tablespoons red wine vinegar
- 1 large bunch of watercress, large stems discarded
Instructions:
- Begin by heating a large skillet. Put in the bacon and cook on high heat until it becomes crispy, which should take about 4 minutes. Then, transfer the bacon to a plate. Proceed by seasoning the chicken tenders with salt and pepper. Place them in the skillet and ensure they are coated with the bacon fat. Cook the tenders, flipping them once or twice, until they are brown on the outside and cooked through, approximately 5 minutes. Afterwards, add them to the plate with the bacon.Next, include the tomatoes, scallions, and vinegar in the skillet. Allow it to boil for 1 1/2 minutes. Once done, reintroduce the chicken and bacon into the skillet. Mix everything well and season with salt and pepper. Take 4 plates and arrange the watercress on each. Top them with the chicken salad and it is ready to be served.
