Chicken, apple, and fennel salad

Ingredients:

  • tablespoons sliced almonds
  • ounces leftover Chicken in a Pot
  • /2 apple, julienned
  • /2 small fennel bulb, thinly sliced, plus 1 Tbsp. fennel fronds
  • tablespoons Whole Grain Mustard Dressing

Instructions:

  1. Heat the oven to 350°. Roast almonds on a small baking sheet with edges, stirring occasionally, until they turn golden brown, which should take around 4 minutes. Allow them to cool.
  2. Combine chicken, apple, and fennel with mustard vinaigrette in a medium bowl. Sprinkle with the roasted almonds and fennel leaves on top.
