Chicken and strawberry salad
Delight in the vibrant flavors of a refreshing Chicken and Strawberry Salad. Juicy strawberries and tender chicken create a perfect balance of sweet and savory.
Ingredients:
- 1 tablespoon sugar
- 2 tablespoons red wine vinegar
- 1 tablespoon water
- ⅛ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- 2 tablespoons extra-virgin olive oil
- 4 cups torn romaine lettuce
- 4 cups arugula
- 2 cups quartered strawberries
- ⅓ cup vertically sliced red onion
- 340g skinless, boneless rotisserie chicken breast, sliced
- 2 tablespoons unsalted cashews, halved
- ½ cup (60g) crumbled blue cheese
Instructions:
- Mix the initial 5 components together in a small bowl to make the dressing. Slowly add oil while stirring continuously with a whisk.
- For the salad, mix romaine lettuce and the following 4 components (up to chicken) in a bowl; lightly toss. Put approximately 2 cups of the chicken mixture onto each of 4 plates. Sprinkle 1 1/2 teaspoons of cashews and 2 tablespoons of cheese on top of each serving. Drizzle around 4 teaspoons of dressing over each portion.
