Chicken and green bean salad

Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1/2 onion, finely chopped
- 3 garlic cloves, minced
- 910g skinless, boneless chicken breasts or trimmed thighs, cut into 3/4-inch pieces
- 1 tablespoon soy sauce, plus more for seasoning
- 1/4 teaspoon toasted sesame oil
- Kosher salt
- Freshly ground pepper
- 1 tablespoon plus 1 teaspoon finely grated lemon zest
- 2 tablespoons fresh lemon juice
- 1 scallion, thinly sliced
- Steamed rice, for serving
Instructions:
- Heat olive oil in a large skillet over medium heat. Cook the onion until softened, stirring occasionally, for about 4 minutes. Next, add the garlic and cook for another minute. Increase the heat to high, then add the chicken and cook until browned on all sides, stirring occasionally, for about 3 minutes. Mix in soy sauce and sesame oil, season with salt and pepper, and stir-fry until the chicken is fully cooked, approximately 3 minutes. Take the skillet off the heat and mix in lemon zest and lemon juice. Adjust the seasoning with salt, pepper, and soy sauce if needed. Transfer the cooked chicken to a serving platter, garnish with sliced scallions, and serve with rice.
