Chicken and asian noodle salad

Indulge in the exotic flavors of an Asian-inspired chicken salad with the perfect blend of fresh vegetables, savory grilled chicken, and delicate noodles.

Ingredients:

  • 5 tablespoons rice wine vinegar
  • 2 tablespoons white or yellow miso
  • 1/4 teaspoon sesame oil
  • 2 (6-ounce) boneless, skinless chicken breasts, cooked and thinly sliced
  • 110g dried Chinese plain or somen noodles, cooked according to package instruction
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, blanched
  • 60g arugula or other baby lettuce (about 2 1/2 cups loosely packed)
  • 1/4 cup, loosely packed, roughly chopped cilantro
  • 2 papayas, halved, peeled, and seeded, optional

Instructions:

  1. Combine rice wine vinegar, miso, and sesame oil in a small bowl, whisk well to mix. Keep it aside.
  2. In a medium bowl, mix chicken, noodles, tomatoes, green beans, arugula or any salad greens you prefer, and cilantro. Pour miso dressing over the salad and mix well. Taste and season as needed. If you're using papayas, place half on each plate. Divide the salad between the papaya halves or serve in stylish Asian bowls for guests.
