Enjoy a refreshing Chicken Salad with the perfect mix of cherry tomatoes and red onion. Bursting with flavor and loaded with nutritious ingredients.

Ingredients:

  • 8 bone-in, skin-on chicken thighs, patted dry
  • 1 ½ teaspoons freshly ground black pepper, divided
  • 1 ¼ teapoons kosher salt, divided
  • 1 tablespoon olive oil
  • 2 small shallots, thinly sliced
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 1 teaspoon honey
  • 230g fresh cherries, pitted and chopped (1 cups)
  • ¼ cup chopped fresh flat-leaf parsley
  • 1 teaspoon chopped fresh thyme
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons bottled balsamic glaze

Instructions:

  1. Preheat the oven to 400°F. Season both sides of the chicken with 1 teaspoon of pepper and salt each. In a large skillet, heat oil over medium-high heat. Add the chicken to the skillet in batches, placing the skin side down, and cook until it browns, which takes around 5 minutes. Then, transfer the chicken, skin side up, to a baking sheet with rims. Roast in the oven until the skin becomes crispy and the chicken is fully cooked, typically for 15 to 20 minutes.
  2. While the chicken is cooking, combine shallots, lemon juice, honey, and the remaining ¼ teaspoon of salt in a small bowl. Let it sit for 10 minutes before adding cherries, parsley, and thyme. In a different small bowl, mix butter, balsamic glaze, and the remaining ½ teaspoon of pepper.
  3. To serve, place the chicken on a plate and top it with balsamic glaze and cherry salsa.
