Enjoy a refreshing Chicken Salad with the perfect mix of cherry tomatoes and red onion. Bursting with flavor and loaded with nutritious ingredients.
Ingredients:
- 8 bone-in, skin-on chicken thighs, patted dry
- 1 ½ teaspoons freshly ground black pepper, divided
- 1 ¼ teapoons kosher salt, divided
- 1 tablespoon olive oil
- 2 small shallots, thinly sliced
- 1 tablespoon fresh lemon juice (from 1 lemon)
- 1 teaspoon honey
- 230g fresh cherries, pitted and chopped (1 cups)
- ¼ cup chopped fresh flat-leaf parsley
- 1 teaspoon chopped fresh thyme
- 2 tablespoons unsalted butter, melted
- 2 tablespoons bottled balsamic glaze
Instructions:
- Preheat the oven to 400°F. Season both sides of the chicken with 1 teaspoon of pepper and salt each. In a large skillet, heat oil over medium-high heat. Add the chicken to the skillet in batches, placing the skin side down, and cook until it browns, which takes around 5 minutes. Then, transfer the chicken, skin side up, to a baking sheet with rims. Roast in the oven until the skin becomes crispy and the chicken is fully cooked, typically for 15 to 20 minutes.
- While the chicken is cooking, combine shallots, lemon juice, honey, and the remaining ¼ teaspoon of salt in a small bowl. Let it sit for 10 minutes before adding cherries, parsley, and thyme. In a different small bowl, mix butter, balsamic glaze, and the remaining ½ teaspoon of pepper.
- To serve, place the chicken on a plate and top it with balsamic glaze and cherry salsa.
