Cherry-almond farro salad

Ingredients:
- 1 cup farro, rinsed
- 2 cups water
- ½ teaspoon salt, divided
- ¼ cup white balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- ¼ teaspoon freshly ground pepper
- 2 cups sweet cherries, pitted and halved
- ½ cup diced ricotta salata or feta cheese
- ¼ cup slivered almonds, toasted
- 3 tablespoons finely diced red onion
- 2 tablespoons chopped fresh mint
Instructions:
- Mix farro, water and 1/4 teaspoon of salt in a medium saucepan. Let it boil over high heat. Lower the heat to keep it gently simmering, cover it and cook until the farro becomes soft, which usually takes around 20 to 30 minutes. Get rid of any excess liquid and stir it with a fork. Place the farro evenly on a large baking sheet to cool down for about 10 minutes.
- While waiting, blend vinegar, oil, pepper and the remaining 1/4 teaspoon of salt in a big bowl. Include cherries, ricotta salata (or feta), almonds, onion, mint and the farro. Carefully mix them together.
