Cheesy hot chicken salad

Ingredients:

  • 4 chicken breasts cooked & diced into 1/2 inch pieces (or shredded)
  • 2 celery stalks, halved lengthwise and finely chopped
  • 5 green onions, finely chopped (reserve 2 tablespoons for garnish)
  • 2 tablespoons fresh thyme, finely chopped
  • 2 cups shredded sharp cheddar cheese (white preferably)
  • 1 tablespoon fresh lemon juice (about 1/2 a lemon)
  • 1 cup mayonnaise
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/3 cup yellow cheddar to top before baking
  • 6-12 frozen puff pastry shells

Instructions:

  1. Prepare the frozen puff pastry shells following the package instructions (typically bake at 425°F for 18-20 minutes).Lightly grease a 9x9 or a 10-inch round baking dish using oil or cooking spray.While the puff pastry is in the oven, combine all the ingredients, excluding 1/3 cup of yellow cheddar cheese and 2 tablespoons of green onions, in the prepared dish. Sprinkle the shredded yellow cheddar on top.Once the puff pastry shells are done baking, let them cool while adjusting the oven temperature to 350°F.Bake the chicken mixture in the dish without covering for about 30-35 minutes, or until it starts bubbling around the edges and the cheese is completely melted.Top the dish with 2 tablespoons of chopped green onions. Optionally, you can add extra toppings like diced tomatoes, fresh thyme, bacon bits, or a drizzle of hot sauce.To serve, use a small sharp knife to remove the tops of each puff pastry and some of the soft inside pastry. Fill each pastry shell with the hot cheesy chicken salad.
