Cheesy chickpea salad toast

Ingredients:
- Tbsp. unsalted butter, room temperature
- Tbsp. extra-virgin olive oil, plus more for drizzling
- thick slices sourdough or French bread
- 15-oz. cans chickpeas, rinsed
- small red onion, finely chopped
- celery stalks, finely chopped
- oz. extra sharp cheddar, coarsely grated
- cup coarsely chopped cornichons
- cup coarsely chopped dill
- Kosher salt, freshly ground pepper
- Flaky sea salt
- Hot sauce and potato chips (optional; for serving)
Instructions:
- Preheat the broiler. Warm 3 tablespoons of unsalted butter at room temperature and 1 tablespoon of extra-virgin olive oil in a large skillet over medium-high heat. Cook 4 thick slices of sourdough or French bread, flipping once, until they turn golden brown and crispy, which should take about 3 minutes. Repeat the same process with 1 tablespoon of extra-virgin olive oil, and the remaining 3 tablespoons of unsalted butter at room temperature, and 4 thick slices of sourdough or French bread. Once done, place the slices on a baking sheet.
- In a large bowl, place two 15-ounce cans of rinsed chickpeas. Using a wooden spoon, a potato masher, or your hands, slightly crush some of the chickpeas, keeping the pieces relatively big (ensure at least one third of the chickpeas remain whole). To the crushed chickpeas, add half of a small finely chopped red onion, 2 finely chopped celery stalks, 8 ounces of coarsely grated extra sharp cheddar, half a cup of coarsely chopped cornichons, and half a cup of coarsely chopped dill; then drizzle with oil, and season with kosher salt and freshly ground pepper. Mix all ingredients well.
- Top each toast generously with the chickpea salad, making sure to cover from edge to edge. Broil until the cheese is melted, typically about 3 to 4 minutes.
- After broiling, sprinkle the toasts with flaky sea salt, drizzle with hot sauce, and if desired, serve with potato chips.
