Cheesesteak salad

Ingredients:
- 450g sirloin or cube steak
- ½ teaspoon salt
- ½ teaspoon ground pepper, divided
- 3 tablespoons extra-virgin olive oil, divided
- 60g sliced provolone cheese
- 1 medium red onion, thinly sliced
- 1 tablespoon white-wine vinegar
- 1 ½ teaspoons Worcestershire sauce
- ½ teaspoon Dijon mustard
- ¼ teaspoon dried oregano
- 1 small clove garlic, grated
- 310g baby spinach
- ½ cup sliced jarred roasted red peppers, rinsed and patted dry
Instructions:
- Dry the steak by patting it and sprinkle salt and pepper, about 1/4 teaspoon on each side. In a large skillet, heat 1 tablespoon of oil on medium-high heat. Place the steak into the skillet and cook it, turning it over once. It should take around 4 to 5 minutes on each side to reach a temperature of 125°F for medium-rare. Then, move the steak to a cutting board, add cheese on top, and let it sit for 5 minutes before cutting it across the fibers.
- While the steak is resting, add chopped onions to the same skillet. Cook them while stirring occasionally until they develop a light brown color, approximately 5 minutes.
- Mix vinegar, Worcestershire sauce, mustard, oregano, garlic, and the rest of the salt and pepper (1/4 teaspoon each) in a large bowl. Gradually whisk in the remaining 2 tablespoons of oil along with any steak drippings. Toss spinach and peppers in the mixture until they are well coated. Serve the salad with the caramelized onions and sliced steak on top.
