Cheddar bbq meatloaf muffins

Ingredients:
- 2/3 cup milk
- 1/2 cup plain dry breadcrumbs
- 910g meatloaf mix (ground beef, pork and veal)
- 1 1/4 cups shredded Cheddar (about 140g)
- 1/2 cup barbecue sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 small green onions, finely chopped (about 1/3 cup)
- 2 cloves garlic, minced
- 1 large egg
Instructions:
- Preheat your oven to 190 °C. Pour the milk over the breadcrumbs in a large bowl and stir them together. Then, add the meatloaf mix, 1 cup of cheese, 1/4 cup of barbecue sauce, salt, pepper, green onions, garlic, and egg. Mix everything gently using your hands until just combined.
- Shape the mixture into 6 balls and place them in a 6-cup nonstick muffin pan. Put the muffin pan on a baking sheet with raised edges, then brush the remaining 1/4 cup of barbecue sauce on top of the meatloaf.
- Bake for 40 minutes, remember to rotate the pan halfway through baking. Sprinkle the remaining 1/4 cup of cheese on top, then continue baking until the meatloaf muffins reach an internal temperature of 70 °C, approximately 5 more minutes. The center muffins might need a bit more time to cook. Let them cool in the pan for 5 minutes.
- Transfer the meatloaf muffins to a serving platter and enjoy them with mashed potatoes and a side of green salad.
