Charred zucchini, chickpea and caramelized onion salad

Ingredients:

  • 1 red onion
  • 3 cloves garlic
  • 1 15 oz can chickpeas drained
  • 1 15 oz can sweet corn drained
  • 2 Divine Flavor Zucchini
  • 3 tbsp Olive oil
  • salt and pepper to taste

Instructions:

  1. Cut red onion into small pieces and transfer them into a pan with approximately 2 tablespoons of olive oil. Keep the heat low. Stir the onions frequently and allow them to cook slowly until they become caramelized.
